Spring onions with Tomato is a mixed curry easily available in daily kitchen and its a variety to everyday meal..tastes different due to spring onions which can be taken with rice roti,chapati,naan and pulka...
Ingredients:
- Spring Onions - 3 bunches
- Tomatoes -2 tomatoes
- Green Chilli's -3 pieces
- Red Chilli Powder - 1 tbsp
- Tumeric Powder - 1 tbsp
- Ginger & garlic paste -1 tbsp
- Salt - to taste
- Cumin powder - 1/2 tbsp
- Coriander powder -1 tbsp
- Coriander leaves - few leaves
For Tempering: (you can increase or decrease quantity to your taste)
- Oil - 3 to 4 tbsp
- Garlic - 3 cloves
- Red chillis - 3 or 4(depends)
- Cumin seeds - 1 tbsp
- Mustard seeds - 1 tbsp
- Asafoetida - a pinch for good smell
- Curry leaves - 1 bunch(most imp for me)
Preparations:
Cut the spring onions into parts. Separate the green portion and the white onion portion .cut the green onion,tomatoes,green chilli's into small pieces and white end bunches also in small pieces(don't waste them) and use them as onions for sorting which enhances the taste of the curry.
- Now first do the tempering with all the ingredients one by one until it turns to golden brown .
- add white spring onions and sort them for few seconds.
- add tomatoes to it and stir slowly till it becomes soft .
- Add salt, turmeric powder,red chilli powder ginger garlic paste,cumin powder,coriander powder and stir it and put a lid on it to cook with vapor for a few seconds.
- check the salt and spices before switch off the power/stove and change it to a serving bowl and decorate with coriander leaves.
